Roasted Chickpeas

If you’re like Jess and myself then you like simple and fast snacks that are as addicting as cra-I mean popcorn! We came across this recipe on Modern Parent Messy Kids while browsing Pinterest and thought it looked so easy that we HAD to try it. Now this recipe comes with 4 different variations, the one we chose uses honey, which definitely isn’t vegan, so we subbed that out for maple syrup.

Roasted Chickpeas


  • 1 Can Chickpeas
  • 1 Tablespoon Olive Oil
  • 1/2 Teaspoon Cinnamon
  • A Pinch Nutmeg
  • 1/8 Teaspoon Sea Salt
  • 1 Tablespoons Pure Maple Syrup


  1. Preheat oven to 375 degrees.
  2. Prepare the beans for roasting by draining and rinsing them, then letting them dry on a towel until most of the excess moisture is absorbed. Spread on a baking sheet lined with parchment paper. Roast the chickpeas in the oven for 45-60 minutes or until the beans are crunchy throughout (just test one- if there’s no crunch, keep baking).
  3. While beans are still hot, toss with olive oil and seasonings.
  4. Throw these back in the oven for 10-15 minutes to caramelize, if you like.Keep in an airtight container for up to 4 days.



These are such a great little snack that once you start you just can’t stop eating. Though they are messy, but I think that’s part of the fun. I think they’re better than popcorn because they have so much more going on. The thing I like most about them is that they’re so versatile! You can really do what you want with them, follow this recipe or one of the other seasonings on the original website, or even go crazy and create your own! I’m thinking we should try the Garlic Parmesan ones next, Jess has a great Vegan Parmesan recipe.



Things I hate: honey and maple syrup… though I’ve learned to appreciate the latter’s addition to recipes I will never have it straight. When Amy showed me this recipe(long before Veggie T.O.) I was intrigued… I had only ever used chickpeas for savory recipes and the idea of a sweet one sparked an interest. Let me just say, these are great – though you MUST remember to keep an eye on the chickpeas during the roasting process – too crunchy and you’ll hurt yourself.
Also, I’m going to have to disagree with Amy about the popcorn – nothing is better than popcorn.
